I used to think around 300x300 would be fine for me. That was before I started using an iPad & iPeng. The native res. for full screen cover photos on that is 768x768. Using photos at that (or larger) resolution look fantastic compared to the 300x300 ones.
I've spent ages downloading new cover art for it, so this time I've been going for around 1000x1000 if it's available, just to give me some headroom for the next upgrade! If there's the slightest chance you might use a tablet (or something similar) to control your squeezebox(es) in the future, I'd highly recommend looking for big cover art. Of course it isn't just the resolution that is important.
