1. Did you add the second folder on initial set-up or afterwords?  If
afterwords, did you run a new scan to add tracks to the library?

2. Your best bet for getting those untitled tracks to show up is to
learn some fundamental items in MP3Tag (or other tag editor) to perhaps
use the folder name as an album title.

In Mp3tag, you can automate the process of reading folder and file info
into tags, relatively easily.  There is a button up on the top toolbar
that is identified as "Filename - Tag" (about the middle of the
toolbar, shows an arrow going to a red-dot).

If you click on that, you can then setup tags based on your paths and
file name.

For an example, if your files are relatively consistent, you may have:

AlbumTitle\01 - Track Title.mp3

with mp3tag, the button above can be formatted as:

%album%\%track% - %title%

The folder name will then become the album tag.  You can adjust the
location of the tags as will fit your setup.  That should at least get
you started.  You can also use tags like %artist% if you want to try
and fill that in.  Last, if you have info that you don't want to read
into tags (can happen with live recordings), you can use the %trash%
"tag" to allow you to ignore that info.

This should get you started.  Once that info is filled out, you'll
probably have to Clear and Rescan your library in the server to keep it
clean.
