I believe the RDAirPlay screen size is hardcoded to support older touch screens and does not support dynamic resizing or scaling to fill the screen. There has been some chatter on this list in the past discussing what it would take to change that (after all, 1024x768 native displays are getting pretty hard to come by these days), but as far as I know, it's still fixed size through the latest RD release.
