I used DenyHosts [1] (creates entries in /etc/hosts.deny) on my Linux servers, but switched to Fail2ban [2] (creates temp iptables firewall rules) at some point. I know DenyHosts also works on Mac OS X (may need some tweaking), Fail2ban also might.
