When upgrading disks, I like to install both disks and boot from knoppix
or the gentoo install disk then partition and format the new disk and
swap partition. Then I mount partitions on both drives, such
as /olddrive/part, /newdrive/part, etc, then do a tar cf - /olddrive |
tar xf -C /newdrive. Dump works well for this function.

Remove the old drive and place the new drive as primary, go back into
your knoppix or gentoo boot disk and run the proper lilo or grub
commands to reload the boot loader. Done!

If you screw up, you still have your original disk to try again with.
