I'm confused.

You indicate that it is ONLY ASCII or EVERYTHING else by this statement:

"As I said in my posting, we either allow everything and cause major
problems or choose one standard. The current list software
  gives us no other option"

But before you stated that you accept ISO-8859 encodings and ASCII:

"We have found that some non-ASCII emails can crash certain email clients.
This is another reason we have the filter set to accept only Latin-1,
Western European ISO, ISO-8859-1, ASCII, etc. postings."

I am not sure I understand. From you previous repsonse you seem to indicate
that the list server can be configured to accept multiple encodings.

You stated that:

"and I will not choose an option that lets email crash
  people's software or computers."

The encoding, UTF-8 WILL NOT CRASH computers as it is compatible with
US-ASCII, just like ISO-8859 series of standards. So, I am not sure I
understand the issue? Do you think UTF-8 will crash ASCII capable mail
readers?
