You are only setting the MIDI channel there... to set the MIDI
instrument, it's on the bottom left (assming you have General MIDI
mapped to your instrument), there is a drop down of 128 GM
instruments. You can also change the name of the track by double
clicking on the title... and to change the name of a region, you
single click on the region and then in the top left section, click on
the 'Edit' button.
