On some of the larger sites we host doing 20-30 million hits a day, we're running 16 mongrels on number of dedicated boxes. Each mongrel uses approx 70 Megs of RAM. Nginx doesn't even register for ram utilization.
We recommend to our clients at-least 512 megs of ram for Virtual Servers and 2-4 Gigs of Ram for dedicated servers.
