Slicehost is *great*. Excellent management interface, wide selection of distributions, no hassle. I generally set up my clients' slices there with Ubuntu (usually an LTS release), Apache, Passenger, Ruby EE, and PostgreSQL (I'm not a fan of mySQL). Pretty easy. BTW, Slicehost was recently bought by Rackspace, probably my favorite dedicated hosting provider. So that makes it twice as cool!
