the HO scale Kadee #5's <snip> the coupled distance between
two cars is also less than scale which is typically 3' between the ends
of cars. I don't have two cars equipped with the #5's so I can't measure
that distance but it is somewhat less than 3'.

Yep, Bud is correct, but there is an easy fix. Just drill a
mounting hole in the correct location and you can make the #5
stick out a bit more from the car's end. It is easy to achieve
the 3 foot distance.
If fiddling with small #5 coupler springs, etc. is not to your liking,
try Kadee #3 which is a factory assembled version of #5. All the parts
are already assembled and all you need do is screw it to the car. Easy!
The coupler 'discussion' continues on into the night........
