Don, I am using primarily Grandt Line (plastic) and Back Shop (brass) link and pin couplers. These are both marketed for HO, but are oversize, and are almost true scale for S. The ones I use most frequently are the ones that fit in a "standard" Kadee #5 coupler box. I have a large supply of another brand of coupler box (extension) that makes a very nice draft gear, and can have sections of the cover plate cut away to represent retainer plates.
I do not do a lot of "operating" and thus I do not do a lot of coupling. But yes, it can be done with a little finesse. Just the same kind of finesse the prototype had to use.
