Mark, welcome to S. I'll start with the coupler question. The Kadee #802 is larger than the #5. The draft gear boxes are entirely different and not interchangable. The #802 WILL couple to the #5, however. I used Kadee HO couplers in situations where the #802 isn't practical, plus some of my "heritage" cars bought from estates have HO Kadee's mounted and there has been no trouble with them mating with the #802's. The American Models snap-lock coupler is a dummy coupler, about the same size as the #802. It will couple with some effoer and of course there is no uncoupling with the AM snap-lock coupler. S-Helper Service also had a Kadee-compatible coupler the size of the #802 they supply with their F-units and ore cars. As far as converinting your 302, that's a tough one. The big problem converting it to scale is the flanges. There was a company (Nixon) that made conversion drivers in the "old days," but you'd really search for them or turn down the flanges yourself. Or, you could do what Brooks Stover has done, use American Models code 148 track and don't worry about the flanges: http://www.buffalocreekandgauley.com/ Scroll to the bottom of the page for pictures of his BC&G.
