Ken is about as close as one could be to the grain business. In my neck
of the woods the elevators handle mostly rice from the fields. The Port
of Houston also has several large export facilities that would probably
fill half the average basement.
I have used two of the Walther's country grain elevators in S. One is
used with only very minor mods but the other was been reworked
considerably. In my PhotoTraxx album you can see the elevators I'm
talking about. Several visitors have commented saying--that looks a
little like a Walther's kit, I didn't know they made anything in S. The
country grain elevators varied considerably in size so I took those
liberties.

here, the 40 foot boxcar was still critical for hauling grain well

terminals for rail to water transfer. Nothing out of the box works but
it should be doable.
I do have a number of photos of country elevators around the midwest
and a nice book of elevators I picked up a couple years ago. Would be
glad to help out if I have images that would help you but I think if
you can get a kit off someone's shelf to start with, you would be in
good shape.
