There are several great resources for this.  I've always been partial to Paul 
Mallery's "Trackwork Handbook" for this and other track building information.  
It contains an actual template in the appendix you can copy on harder stock and 
use for laying out easements on any curve from 24 to 48" radius.

I think the soft cover book is out of print but you can find them at train 
shows, Amazon, etc.  IMHO, well worth the money if you plan to build your own 
railroad!
