Doesn't Sabily already have Gnome-do installed? If so, Gnome-do already has a nice Mac-style dock built in, you just need to enable it in the theme preferences. Cairo-dock is nice, but still very buggy (just installed the new 2.0 release yesterday, and it's still got lots of problems, not something I'd want to thrust onto a new user.
So perhaps just set the Gnome-do dock up by default, if you wanted to make that the default launch/task management method. Or perhaps you could just provide some way of informing users they can setup the Gnome-do dock if they like that kind of interface.
