What Gnome-do can really "do" compairing to cairo dock !! The goal of the distro (generally any distro) is to suit for all kind of users (including the majority who likes to have a stylish look) and i think that cairo dock will give this impact (especially when combinated with screenlet)..
For the version 2, yes i'm with you brother that it's a little buggy compared to the stable version available, so we could include a stable version (<2) that's would better ! PS: from my little experience spreading ubuntu here in tunisia, most people are convinced with a "stylish" version of ubuntu, i've created an add-on contains a large variety of visual enhacement, and the result is : "full convince!".
