Try:

  sage: R.<x,y>=QQ[]
  sage: f1=2*x-3*y-1
  sage: f2=x^2+y^2-5
  sage: f1.change_ring(GF(7))
  2*x - 3*y - 1
  sage: parent(f1.change_ring(GF(7)))
  Multivariate Polynomial Ring in x, y over Finite Field of size 7
