However, `set -o pipefail` is indeed illegal before bash 3.0 (tested it to
be sure). But one could use `PIPESTATUS` for that, presumably?

GNU tar was included as the standard system tar in
FreeBSD beginning with FreeBSD 1.0.

OS X 10.4 still has it as GNU tar, obtained by FreeBSD from NetBSD; OS X
10.7 has it just as FreeBSD tar since apparently it was reimplemented.
Anyway, all of these (Mac, FreeBSD) should probably have the -j flag.
Would Solaris be the only one that doesn't per standard?
