This is really cool. I might recommend making the names a bit shorter,
e.g.
{{{
latex.blackboard_bold(...)
}}}
This is just to be more similar to the way proof works for setting global
settings. Also,
{{{
latex.matrix_delimiters(...)
}}}
which would return them if no arguments are given.
