This can only be done using a work-around. Create an entry for this PING check and create an alert: SEND MAIL (could also be another type of alert) and as WHEN set it to "when bacn up after a down". This means that IF the entry is UP (you get a response to the ping) after it has been down (no response) then alert me. Still the interface will show an UP when the check is up (somehow normal since the host you're pinging is up at that time).
