Yes, IIS is running on 127.0.0.1 (verified & tested with a simple telnet session and some SMTP commands).
We did choose the IP to bind... the option was either DHCP or the IP address assigned to the NIC. I'm not in front of the machine now, so maybe I could have typed in the loopback IP address?
