Folks,I went back and figured out what I'd done to get sawfish-ui to appear in the Gnome Preferences -> Windows. There needs to be a copy of sawfish.desktop in /usr/share/gnome/wm-properties/sawfish-wm.desktop, with an entry for ConfigExec=sawfish-ui. I tried putting sawfish-wm.desktop in.local/share/gnome/wm-properties but this didn't work for me. Combined with a copy of sawfish.desktop in .local/share/applications, this works pretty well. A 10 second startup delay is a small price to pay to ditch metacity.
Much too complicated. I just used the gconf editor to add sawfish as the wm, (key /desktop/gnome/session/required_components/windowmanager value sawfish). then after an X restart sawfish is the windows manager. I don't remember how I got sawfish-ui installed, I certainly didn't do anything beyond the menues on the panel, so maybe it was automatic. There in System/Preferences is a new entry Windows, which is the sawfish-ui. Not well named, I'll admit. There is nothing I can grep in my home directory that mentions sawfish-ui.
