I'm seeing this in the base OS for x86_64, with the same results under 7, 7.9, 
and 7Rolling.  Pulled this specific .treeinfo from

I've read that I might be able to get away with changing my mirror to on-demand

I'm mirroring SL7x locally with katello and it seems to be working for
me.  Which trees are you showing a checksum error on?
