I would start by running the card issuer's software and snooping both the dialog between the card and reader and any network traffic. That will get you started with things like AIDs. You might have to read 7816-4, EMV 96, etc to make any sense of it.
Then you can do things like poke at the card with the same apdus to see what it will do. Be careful about submitting keys or PINs so you don't disable the card.
