Well exim is definitely easier to set up than qmail; certainly from a
security point of view.

Qmail, however, is much more powerful, and editing it's config files
should be a breeze using perl (and possibly php).

Basically, it depends on your needs. Exim for an easy setup, or qmail, for
easy script access.
