For a format you go one of two ways: interactive, or batch.
Batch quizzes involve a list of questions which each groups answers in their own time, and the most correct answers win. Probably the easiest to arrange and adjudicate, but not as much fun? Interactive could be beat-the-buzzer, or turn by turn. Beat-the-buzzer means getting buzzers, but I'm sure someone out there can easily rig one up, attach it to a laptop, and display ongoing automated statistics via video projector ;o). You would need less questions, and it's certainly more fun. For turn by turn you could use a Trivial Pursuits type format, with different categories eg: Linux Distributions Networking Intel Hardware Software Perl Munging Open Source Problem is you need more questions than beat-the-buzzer where everyone answers the same questions.
