I never did exactly that myself, but I did implement a small notification mechanism once that sent out a plain-text mail to let a given user know that the output he requested was ready to be downloaded. It's wiki so just add the links yourself at http://wiki.apache.org/xmlgraphics-fop/ and start writing ;-) I think two pages would be a good idea, one FopUsers (or PowerdByFOP?) for Companys/Projects using FOP and SuccessStories for more detailed Stories.
