The clock on cisco phones 'disappears' when it fails to receive
updates from the ntp server.

This is most likely due to your ntp server configuration.  By default
the ntp mode on your cisco phone is directedbroadcast.  If your ntp
server doesn't support this you will need to change the mode on your
phone to unicast.

Interesting, I have been having this same problem with a 7940 here,  
using out snapgear router as an ntp server. I don't think I have been  
having that problem on another 7940 that is using the same ntp  
server, so I am in the process of investigating further

Is anyone out there using the 7.4 or 7.5 SIP firmware on their  
Cisco 79xx
phones? I have a weird problem where my clock disappears after a  
period of time,

and the only thing that will get it back is a reboot.

Has anyone experienced this?

I noticed this yesterday. I am using Cisco 7960 with SIP 7.4. It was my
first time to see that in two days. I have no idea why this happened either.
