Re: Any baking enthusiasts?

so I found this bread pudding recipe and we made it with my bro today. Truth is that it  was fantastic! and we did not have vanilla extract but it still worked out. We probably did not make enough of the mixture, but nevertheless you apparently can't really go wrong with this one. So to tell you what we did, We used more or less what is indicated for a 12 serving (though a serving is a small slice) and we had some leftover of course, about a third of what we made. We do have a smaller oven and the bigger one has no tray, so we used the smaller one instead and it still worked. We used 6 bread slices, mixed three eggs, one half cup milk, about 5 puffy teaspoons sugar, half a teaspoon poudered cinnamon and mixed it all togheter. Then poured over the sliced bread which was sitting on the tray on top of the thin foil and preheated  at first mistakenly at 150 degrees. Then put that on the oven and ramped it up to 350 degrees. Waited about 45 minutes, then let 10 more go by, then opened the door oven and then 10 minutes later we pulled it out of the tray. Some minor inconveniences with the thin foil happened so we should have just greased things first, but the rest was just literally, a piece of fantastic cake lol.Of course more of the mixture would have been good, and also if we had the vanilla extract but for what it came out to be, not bad at all, so this one is easy to make and probably hard to get wrong, and can be made with confidence. It sort of sizzles too and you can smell it all over the place about 3 to 5 minutes of it been fully baked so if that's helpful to you, there you have an indicator.

Fish is a tricky thing for sighted and blind alike.  Over cook it, you have tuff nasty fish, undercook it you have well, under cooked fish.  I have baked bread many a time. I se a bread machine for the needing of the doe and then I finish it off in the oven.  I have a great recipe I got from my mom years ago If anyone is intrested using bread flower, and a fantastic whole wheet bread recipe I came across a while back.  That one you should do all by hand as its a recipe for a large amount.  and as for those chocolate bisquits, they sound yummy.

Re: Any baking enthusiasts?

Well, guys. I did chocolate biscuits today. The result wasn't half bad. I think I may have overworked the dough a bit, and I really don't have a rolling pin, so the shape on them is a bit off, but the flavor and textures worked out. A nice crisp outside with a moist inner crumb. Probably more crumb than a biscuit should have, but that was kind of the idea. Also could have done a bit more cinamon I think.

Hmm. Didn't know that eggs could make a more fudgey brownie. Actually, I've been curious what the difference is between brownies and cakes as far as their batter composition is concerned.

Re: Any baking enthusiasts?

@Heartsong,Google this to be sure, but if I'm not mistaken, the difference between cakelike brownies and fudgelike brownies is the amount of eggs.I think it may be an egg for cakelike, and two for fudge. But you can look it up or experiment to be sure, because it's been a while since I've made brownies.

I have tried baking in a slow cooker. The trouble is that you really have to be mindful of liquid to solid ratios. Even more so than with dough, I think. Mess it up in a slow cooker, and you may have burning.

Yeah, if there is something specific you want, you have to go learn the density yourself, but it does save time doing long winded math. As for me today, I made my first pass at biscuits. More specifically, filled biscuits... I did it very wrong... Oh well, better luck next time.

Re: Any baking enthusiasts?

So, last night, my roommate and I baked...Well... I designed the ingredients list for cookies... I was prepared to get cookie dough out of my ingredients. When combined, they turned into a thick brownie batter like substance. My roommate preposed we bake the batter like a brownie. The oven spat out a cake. LOL!!! Well, it was a cake with a very crispy and crumbly crust with a moist crumb. It was good. Especially when topped with the powdered sugar.

Re: Any baking enthusiasts?

Yeah, the recipe was self developed. I can give the ratios I used if you know baker's  percentages. With flour as 100%: eggs as 100%: sugar 100-110% (it doesn't matter too much, but that little extra sugar may make things better for you) I had butter and vegetable oil split the fats which was 150%so, using grams to measure we have:50 grams flour50 grams egg (one egg)50/55 grams sugar (more or less, just do be cautious about exceeding 60 grams sugar)37 grams butter37 grams vegetable oilMixing in ingredients after that should bear in mind any fat or sugar content, but I doubt mix-in is going to have enough to cause to big of a deviation. I also added a little milk. About a tablespoon's worth or so.Oh, let me give you guys the conversion website I use to do the necessary conversions.http://www.onlineconversion.com/weight_ … ooking.htmOf course, a kitchen scale is always best, if you happen to have an accessible one of those. I do not, so I have to make do.

@4 I understand what you are getting at. My general opinion is that savory cooking is easier to design recipes and stuff for, but harder to execute, while baking I've had more trouble designing and modifying stuff for, while being easier to execute.

Re: Any baking enthusiasts?

I think I would like it actually, having done it a bit while going through living skills training. The problem is building up the materials and tools to do it, and then also dealing with crap like folding mixtures, separating yolks, checking for peaks, and making sure stuff is golden brown, which obviously can often be replaced with texture and moisture but not always and I don't know enough to intuit what I can use as a workaround for a visual based recipe yet.
