If you are using Windows then I highly recommend the site

He has a listing (that you can download) of each of the different 
options in Windows xp and Microsoft vista that are process's and the 
options to turn on and off  to speed up  your computer.


If you are not using windows, then the most revered exalted high muck 
raker will have to tell you how to do it.

I'd like to know that for OSX.  I can turn them off temporarily with  
Activity Monitor but they start up again when I reboot.  ANd I have  
some things that I installed that aren't in Applications folder so I  
can't get rid of them.  How do I find those?  I installed a MailTags  
app that opens when I open Mail.  I tried it, don't need it but can't  
get rid of it.

I usually google processes I'm not sure of, more often then not the result
is from http://www.liutilities.com/ which produces a program called
wintasks.  This program allows you to do what you are asking.  Not sure
about a freeware app that has these kind of options.  Between using google
and the msconfig command built into windows xp you can pretty much do the
same thing.
