I am needing to have to change my diet asap.  I am now on blood pressure med
but in good health.  Can someone direct me to a comprehensive Mediterranean

I bought a garlic press from QVC. First you roll the garlic clove in the
rubber sheet, and it removes the skin. Then you put it in the tall
cylindrical thing and put the cap on that has a long cylinder in it and

pressed garlic, gut I don't remember the name of the device.

Hamburger Stroganoff



Add a tossed green salad and sautéed red and green bell pepper strips for a 
satisfying family-friendly meal.

Yield: 6 servings (serving size: about 1/2 cup stroganoff, 2/3 cup pasta, and 1 
1/2 teaspoons parsley)

Ingredients

· 8  ounces  uncooked medium egg noodles 

· 1  teaspoon  olive oil 

· 1  pound  ground beef, extra lean 

· 1  cup  prechopped onion 

· 1  teaspoon  bottled minced garlic 

· 1  (8-ounce) package presliced cremini mushrooms 

· 2  tablespoons  all-purpose flour 

· 1  cup  fat-free, less-sodium beef broth 

· 1 1/4  teaspoons  kosher salt 

· 1/8  teaspoon  black pepper 

· 3/4  cup  reduced-fat sour cream 

· 1  tablespoon  dry sherry 

· 3  tablespoons  chopped fresh parsley 

Preparation

1. Cook pasta according to package directions, omitting salt and fat. Drain and 
rinse under cold water; drain.

2. Heat oil in a large nonstick skillet over medium-high heat. Add beef to pan; 
cook 4 minutes or until browned, stirring to crumble. Add onion, garlic, and 
mushrooms to pan; cook 4 minutes or until most of liquid evaporates, stirring 
frequently. Sprinkle with flour; cook 1 minute, stirring constantly. Stir in 
broth; bring to a boil. Reduce heat, and simmer 1 minute or until slightly 
thick. Stir in salt and pepper.

3. Remove from heat. Stir in sour cream and sherry. Serve over pasta. Sprinkle 
with parsley.

Mediterranean Chicken Hero with Yogurt Sauce

4 chicken breast halves, skinned and boned
3 tablespoons light olive oil
1 teaspoon soy sauce
1/4 teaspoon dried basil, crushed
1/4 teaspoon dried marjoram, crushed
1/4 teaspoon dried rosemary, crushed
1 loaf (4x18-inch) unsliced French bread
1/4 cup softened reduced calorie margarine
1 large garlic clove, minced
1 small green pepper, sliced thin
1 small sweet red pepper, sliced thin
1 small yellow pepper, sliced thin
1/4 cup sliced black olives
1 large shallot, sliced thin
Yogurt Sauce: recipe follows
3 tablespoons sliced almonds

Place chicken between 2 pieces of wax paper and gently pound to 1/4-inch 
thickness. In small bowl, mix olive oil and soy sauce. Add chicken, turning to 
coat. Place chicken on broiler pan; sprinkle with basil, marjoram and rosemary.

Set oven temperature at Broil and place rack so chicken is about 6 inches from 
heat. Broil, turning, about 12 minutes or until chicken is light brown and fork 
can be inserted with ease. Remove chicken from oven; set aside and keep warm.

Cut bread in half lengthwise. Hollow bottom half of loaf, leaving at least 
1/2-inch crust.

In small dish, mix margarine and garlic; spread on inside of bread. Place on 
broiler pan and broil until brown; remove from oven.

Arrange chicken, green pepper, red pepper, yellow pepper, olives and shallots 
on bread. Spoon 1/2 of Yogurt Sauce over all. Garnish with sliced almonds. Cut 
in 6 parts. Serve remaining Yogurt Sauce in separate bowl.

Yogurt Sauce:
In medium bowl, mix together:
1 cup plain low-fat yogurt
2 tablespoons country Dijon mustard
4 teaspoons honey

1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
1 clove garlic, finely chopped
2 cups cut-up cooked chicken or turkey
1/2 cup chopped drained oil-packed sun-dried tomatoes
1/4 cup sliced ripe olives
2 cans (15 to 16 ounces each) great northern beans, rinsed and drained

Heat oil in 10-inch skillet over medium heat. Cook basil and garlic 
in oil 3 minutes, stirring frequently.

Stir in remaining ingredients. Cook, stirring frequently, until hot. 
Serve over pasta or rice.

1/4 cup butter or margarine, softened
3/4 cup firmly packed brown sugar
1/2 cup crunchy peanut butter
1/4 cup corn syrup
1 egg
1 tsp. vanilla
3/4 cup flour
1/2 tsp. baking powder
1-1/2 cups quick cooking oats
1/2 to 3/4 cup raisins
1 package (6-oz.) chopped dried fruit
1/2 cup chopped peanuts (or fruit and nut mixture)
1/4 to 1/3 cup sunflower seeds (optional)
Preheat oven to 325. Line a 9x13 inch baking pan with aluminum foil, extending 
foil over ends of pan. Lightly grease foil. In a medium bowl, cream butter and 
brown sugar until fluffy. Add peanut butter, corn syrup, egg, and vanilla; beat 
until smooth. In a small bowl, combine flour and baking powder. Add dry 
ingredients to creamed mixture; stir until a soft dough forms. Stir in oats, 
fruit, and peanuts and sunflower seeds. Press mixture into prepared pan. Bake 
for 30 to 33 minutes or until firm and lightly browned. Cool in pan. Use ends 
of foil to lift from pan. Cut into 2x4-inch bars. Wrap individually or store in 
an airtight container.

Frozen Strawberry Margarita Pie

1 1/4 c. finely crushed pretzel crumbs
1/2 c. plus 2 T. butter, melted
1/4 c. sugar
1 (14-ounce) can Eagle Brand Sweetened Condensed Milk
1 c. chopped fresh or frozen unsweetened strawberries, thawed
1/4 c. fresh squeezed lime juice
3 to 4 T. tequila
2 T.  triple sec or other orange-flavored liqueur
2 to 4 drops red food coloring, optional (don't use too much)
1 c. (1/2) pint whipped cream, whipped

Combine pretzel crumbs, margarine and sugar, press firmly on bottom and up
side of lightly butered 9  pie plate. In large bowl, combine sweetened
condensed milk, strawberries, lime juice, tequila, triple sec and food
coloring.  Fold in whipped cream.  Pour into prepared crust.

Freeze overnight for best results.  Garnish with fresh whipped cream, sliced
strawberries and lime slices.

MARGARITA PIE:  Omit the strawberries and red food coloring.  Increase lime
juice to 1/3 c.  Proceed as  above, freeze overnight.  Garnish with fresh
whipped  cream, thinly sliced orange slices, thinly sliced lime slices.

Northern Exposure Chicken Burgers with Apple Yogurt Sauce

1 pound ground chicken breast
1/2 cup cooked wild or brown rice
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon pepper
Apple Yogurt Sauce (recipe follows)
4 sandwich buns
4 teaspoons margarine
parsley sprigs
apple slices dipped in lemon juice

In medium bowl, mix together chicken, cooked rice, nutmeg, salt and pepper. 
Divide into 4 patties.

Place on broiler pan and broil, about 4 inches from heat, about 5 minutes per 
side.

Spread margarine lightly on inside of buns and toast in oven.

Place chicken on toasted buns and spoon on Apple Yogurt Sauce. Garnish with 
parsley sprigs and apple slices.

Apple Yogurt Sauce:
In small bowl, mix together:
1/2 cup plain yogurt
1/4 cup chopped unpeeled apple
2 tablespoons chopped toasted pecans
1 tablespoon chopped parsley
1/2 teaspoon apple pie seasoning

Slow Cooker Green Beans, Ham and Potatoes

Prep Time: 30 Min

Cook Time: 4 Hrs

Ready In: 4 Hrs 30 Min

Servings: 10

 2 pounds fresh green beans, rinsed and trimmed

1 large onion, chopped

3 ham hocks

1 1/2 pounds new potatoes, quartered

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon seasoning salt

1 tablespoon chicken bouillon granules

ground black pepper to taste

Halve beans if they are large, place in a slow cooker with water to barely 
cover, and add onion and ham hocks. Cover, and cook on High until simmering. 
Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but 
not done.

Add potatoes, and cook for another 45 minutes. While potatoes are cooking, 
remove ham hocks from slow cooker, and remove meat from bones. Chop or shred 
meat, and return to slow cooker. Season with garlic powder, onion powder, 
seasoning salt, bouillon, and pepper. Cook until potatoes are done, then 
adjust seasoning to taste.

To serve, use a slotted spoon to put beans, potatoes, and ham into a serving 
dish with a little broth.

Using a frozen whip cream topping is as far as I'll even *think* of going

or ready-whip.  You prepare the pan, then spray the batter directly on it.

Is this a welcome convenience or the epitome of laziness?  If you've tried
this product, please let me know how it turned out.

Here's one I like to make... one packet vanilla or flavor of choice
Carnation instant breakfast, 1 egg, 1 six-ounce carton strawberry or other
flavored yogurt, a banana if you have one, perhaps a small scoop vanilla ice
cream, 1 ice cube; milk.  Put all in blender and blend.
