I find it helpful to peel from the bottom of the clove (where it was attached to the base) and work my way up. If the base is completely removed, you will see a small indentation on the bottom of the clove where you can start peeling. It helps to use a fingernail to start peeling. If I am having some trouble removing some skin, I hold the clove of garlic with my thumbs and forefingers and either do a slight twisting motion (my hands twisting in opposite directions) or apply a small amount of pressure as if I were trying to break it in half. Hamburger Stroganoff Add a tossed green salad and sautéed red and green bell pepper strips for a satisfying family-friendly meal. Yield: 6 servings (serving size: about 1/2 cup stroganoff, 2/3 cup pasta, and 1 1/2 teaspoons parsley) Ingredients · 8 ounces uncooked medium egg noodles · 1 teaspoon olive oil · 1 pound ground beef, extra lean · 1 cup prechopped onion · 1 teaspoon bottled minced garlic · 1 (8-ounce) package presliced cremini mushrooms · 2 tablespoons all-purpose flour · 1 cup fat-free, less-sodium beef broth · 1 1/4 teaspoons kosher salt · 1/8 teaspoon black pepper · 3/4 cup reduced-fat sour cream · 1 tablespoon dry sherry · 3 tablespoons chopped fresh parsley Preparation 1. Cook pasta according to package directions, omitting salt and fat. Drain and rinse under cold water; drain. 2. Heat oil in a large nonstick skillet over medium-high heat. Add beef to pan; cook 4 minutes or until browned, stirring to crumble. Add onion, garlic, and mushrooms to pan; cook 4 minutes or until most of liquid evaporates, stirring frequently. Mediterranean Chicken Hero with Yogurt Sauce 4 chicken breast halves, skinned and boned 3 tablespoons light olive oil 1 teaspoon soy sauce 1/4 teaspoon dried basil, crushed 1/4 teaspoon dried marjoram, crushed 1/4 teaspoon dried rosemary, crushed 1 loaf (4x18-inch) unsliced French bread 1/4 cup softened reduced calorie margarine 1 large garlic clove, minced 1 small green pepper, sliced thin 1 small sweet red pepper, sliced thin 1 small yellow pepper, sliced thin 1/4 cup sliced black olives 1 large shallot, sliced thin Yogurt Sauce: recipe follows 3 tablespoons sliced almonds Place chicken between 2 pieces of wax paper and gently pound to 1/4-inch thickness. In small bowl, mix olive oil and soy sauce. Add chicken, turning to coat. Place chicken on broiler pan; sprinkle with basil, marjoram and rosemary. Set oven temperature at Broil and place rack so chicken is about 6 inches from heat. Broil, turning, about 12 minutes or until chicken is light brown and fork can be inserted with ease. Remove chicken from oven; set aside and keep warm. Cut bread in half lengthwise. Hollow bottom half of loaf, leaving at least 1/2-inch crust. In small dish, mix margarine and garlic; spread on inside of bread. Place on broiler pan and broil until brown; remove from oven. Arrange chicken, green pepper, red pepper, yellow pepper, olives and shallots on bread. Spoon 1/2 of Yogurt Sauce over all. Garnish with sliced almonds. Cut in 6 parts. Serve remaining Yogurt Sauce in separate bowl. North Pole Granola Bars 1/4 cup butter or margarine, softened 3/4 cup firmly packed brown sugar 1/2 cup crunchy peanut butter 1/4 cup corn syrup 1 egg 1 tsp. vanilla 3/4 cup flour 1/2 tsp. baking powder 1-1/2 cups quick cooking oats 1/2 to 3/4 cup raisins 1 package (6-oz.) chopped dried fruit 1/2 cup chopped peanuts (or fruit and nut mixture) 1/4 to 1/3 cup sunflower seeds (optional) Preheat oven to 325. Line a 9x13 inch baking pan with aluminum foil, extending foil over ends of pan. Lightly grease foil. In a medium bowl, cream butter and brown sugar until fluffy. Add peanut butter, corn syrup, egg, and vanilla; beat until smooth. In a small bowl, combine flour and baking powder. Add dry ingredients to creamed mixture; stir until a soft dough forms. Stir in oats, fruit, and peanuts and sunflower seeds. Press mixture into prepared pan. Bake for 30 to 33 minutes or until firm and lightly browned. Cool in pan. Use ends of foil to lift from pan. Frozen Strawberry Margarita Pie 1 1/4 c. finely crushed pretzel crumbs 1/2 c. plus 2 T. butter, melted 1/4 c. sugar 1 (14-ounce) can Eagle Brand Sweetened Condensed Milk 1 c. chopped fresh or frozen unsweetened strawberries, thawed 1/4 c. fresh squeezed lime juice 3 to 4 T. tequila 2 T. triple sec or other orange-flavored liqueur 2 to 4 drops red food coloring, optional (don't use too much) 1 c. (1/2) pint whipped cream, whipped Combine pretzel crumbs, margarine and sugar, press firmly on bottom and up side of lightly butered 9 pie plate. In large bowl, combine sweetened condensed milk, strawberries, lime juice, tequila, triple sec and food coloring. Fold in whipped cream. Pour into prepared crust. Freeze overnight for best results. Garnish with fresh whipped cream, sliced strawberries and lime slices. MARGARITA PIE: Omit the strawberries and red food coloring. Increase lime juice to 1/3 c. Proceed as above, freeze overnight. Slow Cooker Green Beans, Ham and Potatoes Prep Time: 30 Min Cook Time: 4 Hrs Ready In: 4 Hrs 30 Min Servings: 10 2 pounds fresh green beans, rinsed and trimmed 1 large onion, chopped 3 ham hocks 1 1/2 pounds new potatoes, quartered 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon seasoning salt 1 tablespoon chicken bouillon granules ground black pepper to taste Halve beans if they are large, place in a slow cooker with water to barely cover, and add onion and ham hocks. Cover, and cook on High until simmering. Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but not done. Add potatoes, and cook for another 45 minutes. While potatoes are cooking, remove ham hocks from slow cooker, and remove meat from bones. Chop or shred meat, and return to slow cooker. Season with garlic powder, onion powder, seasoning salt, bouillon, and pepper. Cook until potatoes are done, then adjust seasoning to taste.
