whiz in the kitchen, made a mud pie with firm tofu in it, blended with
whatever chocolate filling she used. Tofu can be plain and bland-tasting if
you cut some off the slab and have a taste. But it's an amazing chameleon,
taking on the flavors of what it gets cooked with. I lost the recipe for the
pie, so am sorry I can't send it. But that absulutely fabulous pie is one of
my favorite memories about the camp.

When I was going to summer camp as a kid, the Seventh-Day Adventist
cook, a whiz in the kitchen, made a mud pie with firm tofu in it,
blended with whatever chocolate filling she used. Tofu can be plain
and bland-tasting if you cut some off the slab and have a taste. But
it's an amazing chameleon, taking on the flavors of what it gets
cooked with. I lost the recipe for the pie, so am sorry I can't send
it. But that absulutely fabulous pie is one of my favorite memories
about the camp.

Tofu requires seasoning and that you cook it well. It is unhealthy for you if 
it is under-cooked. I haven’t made it in a long time, but here is what I used 
to do with it as a stir-fry.

First I would wash off the brick under cold water for a minute. I always got 
the extra firm variety and I would slice the brick into byte-size cubes. then I 
would marinate it in terriachi sauce for several hours.

In a large skillett, heat oil of your choice (enough to coat the pan without 
your food swimming in it). Then add in the cubed tofu and sauce. To that add 
some chopped onion & garlic. Also some cut up beggies that you like. I used to 
like broccoli, baby corn, snap peas. I would also add1 can of water chestnuts 
drained of all liquid. 

If there is a bag of some blend of veggies you like that’s fine in place of 
fresh. Let the entire concocktion simmer for about 20-25 minutes with a cover 
on the pan. Every so often, give the mixture a stir about the pan so the tofu 
cooks on all sides. If you like serve over/with rice. You could also add some 
soy sauce to it but that is very high sodium so go lightly with it.

It seems to me if you don't like it you would want a bit of that cardboard
taste. That way your husband won't like it either and you can forget about
the stuff! I'm with you. I don't like it either. I tolerate it just to be
polite but won't bother to cook and eat it on my own. It is ok not to like
everything you come in contact with.

You can bake the tofu and have it turn out pretty crispy.  You can marinate it 
in a sauce, the tastier the better.  But first of all, you really need to drain 
it. 

The first thing you have to do is get the water off it.  Cut into even shaped 
pieces.  You need paper towels under it and over it.  Press gently but firmly 
down on it to get the water out.  This might need a thick layer of paper 
towels.  I saw one recipe where they said to put it under a cutting board and 
then carefully put weights on it to squeeze the water out. Don't wind up with 
it breaking apart like what happens to me. 

You can marinate it in oil, soy sauce, maybe honey or brown sugar, or maybe use 
teriyaki sauce if you have it, but something sweet and sour is good.  Tofu does 
not have much flavor, so the more you can give it the better.  Marinate it for 
a while to soak in the flavors.

Put in a 400 degree oven.  I am not sure how long to bake it, maybe 20 minutes. 
 You will need to take it out and turn it over and bake again.  

Sorry, I can't get to my recipes.  But that is what I would do.  Then if you 
don't like it, you can make your husband eat it all.

I am sorry I don't have a recipe.  I have some in my VarioUltra, but that 
device has an extremely dead battery right now.
