Why is dkms the preferred way? It integrates the modules into the system
much uncleaner than the old-fashioned ways that build .debs and then
proceed to install them. And it doesn't allow to separate building
and running on two different systems.

I'd say because it's the only way to provide modules without manual
intervention. Please keep in mind that linux-modules-extra has been/will be
removed from Debian.

Nobody forces you to use dkms.
