When I first started to try to get xorg 7.0 a few weeks ago, the
xorg-x-window-system-x-window-system-core dependency list was missing
a few things here and there, so tried to get what I could and waited for
each update to see what was added. Now with IIRC 7.0.3 or 7.0.4, the
xorg packages seem nearly complete.
There were a few things like: new locations for font files, missing font
pacakges, missing gl or mesa dependencies and other as of yet unknown
changes/transitions that may need to be completed or fixed but as of
7.0.4, it seems very close to becoming an 'unstable' packages.

OK, I bit the bullet and installed x.org 7.0.4.  After fixing the
font directory problem, X starts, but the system has forgotten the
systemwide DE.  Now, when I run startx, it only brings up a small 
fixed-size xterm window.

I'm able to start GNOME by typing this in that xterm window:
metacity 
gnome-session 

So, how do I tell the system what the systemwide DE should be?
There must be a Debian Way to do it, but I can't find it.
