Hey @vanvugt, I just wanted to share that I figured out the problem.
Apparently, I experienced the same thing in all the distros I tried. It
was a hardware issue that caused the whole ruckus. My laptop is an ASUS
TUF Gaming F15 FX506HCB, and these laptops are known for their faulty
MediaTek Wi-Fi 6 MT7921 Wireless LAN Card. As I explained, at first, Wi-
Fi disappears, and the whole system crashes, not even shutting down
properly. I bought a WiFi USB Mini Adapter and used it. The condition
improved a lot, but there were still issues. Yesterday, I disabled the
inbuilt Wi-Fi adapter in the BIOS settings, and voila, it's working
completely fine. Sorry for the late reply, and thanks a lot for your
support.

  I start from a fresh boot and launch empathy from the gnome-shell

  Using the contact list I double click on a user I want to chat to.

  This does not open a conversation

  I search for a user in the shell and start gnome-contacts with that
  user highlighted, I can then launch a conversation with that user.

  This opens a conversation with that user.

  I then go back to the contact list (empathy) and double click on
  another user, this then loads as a new tab in the open conversation.
