If you just want to get it off your screen but leave it running, put it
on another virtual desktop. In Gnome 3 gnome-shell you open the overview
and drag the window to the second desktop in the bar on the right.

Do you UNINSTALL older versions, or just DELETE/REMOVE them ? 

When DELETE/REMOVE them your system may think they still there, so try
using them, then may update or reinstall them to fix problem of them
not working, as not there, by re-installation or upgrading. 


When uninstall files expect links using them removed, so files/apps are
not trying to use now removed files.

For future reference: please *always* state which version of Evolution
you're asking about (Help->About). Saying "Evolution through Debian" is
not useful information. Even if you said which version of Debian it
wouldn't be useful as most people here use other distros and besides
essentially nothing about Evolution depends on which distro you have.

Regarding the tray:

That legacy notification tray for applications (which for unknown
reasons use a status icon concept) has been removed in GNOME 3.26 as it
always got in the way. Proper notifications end up in the top bar.
Users can install one of the gnome-shell extensions, either based on
the XEmbed support or implementing the DBus-based StatusNotifier spec.
