If all you need is a plainsong line, with square notation, the St.
Meinrad fonts by themselves will do the trick.

If it's only a small piece of chant that you need to do, I'd suggest
that you check the Fugetta font at
http://www.efn.org/~bch/AboutFonts.html before spending money on the St
Meinrad one - it has some square notation symbols and clefs.

There are chant fonts available from St. Meinrad's Archabbey in
Southern Indiana.

There is also Robert Piechaud's Medieval plug-in, which is more
expensive but may better suit your needs .

What am I missing?

First, set the Notehead font to the relevant font, either globally
through Document Settings, or with a staff style. Then, if for example,
you want a line of black square notation, create a long bar in something
like 18/1 time (for an 18-note phrase, obviously), and enter the notes
as semibreves. Use the Note Shpae Tool in Special Tools to change the
semibreve noteheads to your choice. Or, you can change noteheads with
the Mass Mover tool.
