Try going to where your workspace folder is and change the name of it, then 
open Eclipse and see if it starts normally and asks to select a workspace.Did 
you change the memory settings at all?

don't know about the mac but i can usually nurse eclipse back to health on XP 
via

C:\eclipse\eclipse.exe -clean

ie the -clean bit.

When you view the ActivityMonitor in the OS, are the CPU and memory
usage normal or unusually high? Maybe check the Console to view the
detailed OS log files. If you reinstall keep in mind that there is a
newer version of Flex Builder that you might want to upgrade because
it contains bug fixes.
