Spicy Mango Chicken Curry

  Serves 2

* 3 Chicken Breasts Chopped into Bite Size Pieces
* Flesh of 1 Whole Mango, coarsely chopped
* 10 Cloves garlic, crushed with the side of a knife and coarsely chopped
* 5 Teaspoon Curry Powder
* 10 Cayenne Chillies sliced in half
* 5 inches Root Ginger grated
* 5 Tablespoons Vegetable Oil
* 1 glass white wine or eqivalent water

  Method

Heat the oil to a medium heat, add the curry powder and stir for 1 minute. Add 
the chicken and brown on all sides. Add the mango, stir fry for 5 minutes. Add 
the wine, garlic, ginger and simmer for 5 minutes. Add the chillies, stir fry 
until the meat is cooked. Drain off excess oil and serve with plain rice.

Chettinaad fried chicken1 medium-sized (800 gm) chicken2 medium-sized onions 1-inch piece ginger 4-6 cloves garlic4 green chillies4-6 red chillies whole 10-12 curry leaves ½ tsp turmeric powder1 tbsp lemon juice2 tbsp rice flourSalt to tasteOil to shallow fryClean, wash and slit chicken through the backbone and breast, into two equal halves. Make three to four half-inch deep cuts on breast and leg pieces. Peel, wash and roughly chop onions, ginger and garlic. Remove stems, wash and roughly chop green chillies. Remove stems of red chillies and grind to a smooth paste along with onion, ginger, garlic and green chillies, adding a little water if required. Wash, drain and finely shred curry leaves.Blend turmeric powder, lemon juice and rice flour into the masala paste and mix in salt to taste. Apply this mixture thoroughly and liberally on chicken and leave to
 marinate for two to three hours, preferably in the refrigerator. Mix in shredded curry leaves. Heat oil in shallow pan, add marinated chicken and sauté for two minutes on both sides to seal the exterior. Reduce heat to medium, cover with a lid and cook for 15 to 20 minutes, turning over and basting frequently with remaining marinade. Sprinkle a little water if chicken starts drying. The last few minutes of cooking should be done on high heat, so that the surface of the chicken is crisp and golden brown. Cut into smaller pieces and serve hot. VATICAN CITY (Reuters) - In the latest Vatican broadside against The Da
Vinci Code, a leading cardinal says Christians should respond to the book
and film with legal action because both offend Christ and the Church he
founded.

Cardinal Francis Arinze, a Nigerian who was considered a candidate for pope
last year, made his strong comments in  a documentary called The Da Vinci
Code-A Masterful Deception.

Arinze's appeal came some 10 days after another Vatican cardinal called for
a boycott of the film. Both cardinals asserted that other religions would
never stand for offences against their beliefs and that Christians should
get tough.

Christians must not just sit back and say it is enough for us to forgive
and to forget, Arinze said in the documentary made by Rome film maker Mario
Biasetti for Rome Reports, a Catholic film agency specializing in religious
affairs.

Sometimes it is our duty to do something practical. So it is not I who will
tell all Christians what to do but some know legal means which can be taken
in order to get the other person to respect the rights of others, Arinze
said.

This is one of the fundamental human rights: that we should be respected,
our religious beliefs respected, and our founder Jesus Christ respected,  he
said, without elaborating on what legal means he had in mind.

A transcript of the documentary, due to be screened in Rome later this month
just before the release of the film version of the best-selling book at the
Cannes Film Festival, was made available to Reuters.

The book, written by Dan Brown, has sold more than 40 million copies.

The novel is an international murder mystery centered on attempts to uncover
a secret about the life of Christ that a clandestine society has tried to
protect for centuries.

The central tenet of the book is that Jesus married Mary Magdalene and had
children.

BLASPHEMY

Those who blaspheme Christ and get away with it are exploiting the
Christian readiness to forgive and to love even those who insult us. There
are some other religions which if you insult their founder they will not be
just talking. They will make it painfully clear to you, Arinze said.

This  appeared to be a reference to protests by Muslims around the world over
cartoons of the Prophet Mohammad.

Last month, another broadside against The Da Vinci Code was launched by
Archbishop Angelo Amato, the number two official in the Vatican doctrinal
office which was headed by Pope Benedict until his election last year.

Amato urged a boycott of the film and Arinze, like his fellow cardinal, also
blasted the credibility of the book.

'The Da Vinci Code' presents (Christianity) wrongly ... any film produced
on the basis of that book is already in error from the word go, no matter
how interesting it might appear, Arinze said.

Catholic group Opus Dei has told Sony Pictures that putting a disclaimer on
the movie stressing it is a work of fiction would be a welcome show of
respect toward the Church.

In the novel and film, Opus Dei is characterized as the latest in a series
of secretive groups that worked over the  centuries to obscure truths about
Jesus Christ.

Opus Dei is a controversial conservative Church group whose members are
mostly non-clerics and are urged to seek holiness in their everyday
professional jobs and lives. It has rejected criticisms that it is secretive
and elitist.

The movie, which is being released by Sony Pictures division Columbia
Pictures, stars Tom Hanks. Sony Pictures is the media wing of Japanese
electronics giant Sony Corp.

 Saashtikaars, belying his 65 years one observes him nimbly scramble and descend swinging palms. What started off as “Devachem besanv asliar zatlem’ (God willing, it will work) more than forty years down the line, is a success story accepted with touching humility and modesty.   It is to Feni Francisco that connoisseurs and regulars of the hardy brew travel from all over Goa. Some clients go back a good 30 years or so and extend to Goa’s top politicians, tiatr artistes and cross borders to Bollywoods ‘Anthony Gonsalveses’. Such is the demand, that off- season (monsoons) Francisco sells only one bottle per person. “It wouldn’t be fair to persons driving all the way from Bardez to go empty handed’’. He says. Otherwise, a client may buy upto 10 bottles each.   Francisco’s routine today is the same it was at 20. Up at 5 am, he ascends palms to hang the ‘Budkulo’ (earthen pot) to collect toddy. Its coconut plucking until noon (a brief Kanji-break at 11am). Back on the
 palms by 1 pm to descend with a pot of toddy and heads for his tiny ‘brewery’ adjoining his humble home. Watching him at work is a lesson in minutiae and intricacies of the art of brewing feni.   Ask him if factories manufacturing Feni are selling authentic stuff, he slaps the palm he was leaning against, as if it had just insulted his grandmother…but calms down to rue the fact that spurious stuff sold by factories at cheap rates, has traditional brewers shut shop. “Some often complain my price is high, but if a man knows Feni from what passes off as feni, he can tell by taking a small sip…the true Feni drinker can tell from smell… knows that many a laborious day has gone into the making. I don’t advertise or force anyone to buy ”he says. Francisco gets bit emotional as he tells “Hya soryaan Goemchem nanv soglia sounsarak gazoilam’’(this spirit has sung the Goan melody to the world) and adds “I would rather that God takes me away, than keeps me
 alive to make and sell something else as Coconut Feni’.  Interestingly, the proud keeper of Goa’s coconut Feni is a teetotaler. Seven Steps to Healthy Anger Release   1. Recognise the anger you're feeling. 
That may sound simple enough, but in all too many cases it's the biggest 
obstacle we face. Anger may be denied because we feel too guilty about it, or 
afraid of it and as a result, the feeling is turned insides where it festers.
   
  2. Decide what made you angry. Ask yourself the very important question. Is 
this worth getting angry over? If it's a small annoyance that's ticked you off-
-as it is in the majority of angry episodes--forget it. If you can't forget 
it, then perhaps the source of your anger goes beyond this simple incident. 
Ferret out the underlying cause of your hostility. Bring your feelings to the 
surface and deal with them.
   
  3. Give the Provoker the benefit of the doubt. Instead of inflaming your 
anger by feeding yourself such thoughts as Who does he think he is for 
treating me in this underhanded way! suggest to yourself that perhaps this 
person is having a bad day. Come up with a reasonable justification for the 
behaviour something that you can understand and relate to.
   
  4. Count ten or practice some form of mental relaxation. Most psychologists 
agree there's nothing to be gained by an explosive outburst aimed at 
retaliations. Calm down first, then discuss the conflict rationally.
   
  5. Make your grievance known without attacking the other person.This calls 
for tact and some good communication skills. One important tip. Register your 
complaint using I instead of you for example, instead of saying, you're 
acting unfairly and you're wrong, it's far more effective to say, I feel 
hurt. What you're doing doesn't take my needs into account.
   
  6. Listen: Another tough technique to master. But really try. Listen hard. 
And above all, understand. This is the key step in resolving the conflict. And 
resolving the conflict is, after all, the key to safely diffusing your anger.
   
  7. Forgive: When you forgive someone (and this includes yourself), many 
clearly positive psychological and physiological changes take place, you feel 
warm, your blood pressure and heart rate drop, you may even cry. But most 
importantly, through forgiveness you once again experience the love that is 
the essence of your relationship. You remember that you care about this person 
which may be why their hurt so much in the first place.

   Are you buying property in Goa? Doing so without acquiring the title 
certificate and the nil-encumbrance certificate on the property would cost you 
dearly. This has happened to about 24 persons who paid a builder an average of 
Rs four lakh each and bought flats in Diyana Holiday Homes at Umtavaddo, 
Calangute. The builder even gave them physical possession of the flats but 
subsequently, the Economic Development Corporation Limited (EDC) attached the 
property and in a recent newspaper advertisement, has announced it will 
auction on September 7. The builder had mortgaged the property to the EDC to 
avail of a loan of Rs 65 lakh before he sold the flats to the unsuspecting 
buyers. He took their money but concealed the fact that the property they were 
buying was mortgaged.

According to Mr Benedict Nazareth, a Mapusa-based lawyer for four of the
flat-owners in Diyana Holiday Homes, the buyers should have obtained the
title certificate and the nil-encumbrance certificate on the property before
they paid the builder. “Every person who buys immovable property has to
ensure that the property title is clear and marketable. The title
certificate is issued by any lawyer who will conduct the necessary
investigations and issue it,” Mr Nazareth said. “Secondly, they should have
also obtained a nil-encumbrance certificate from the office of the
sub-registrar. The moment a mortgage is registered, the same is reflected in
the encumbrance register maintained by the sub-registrar. Had the buyers
approached the sub-registrar, they could easily have found out that Diyana
Holiday Homes was mortgaged.”

Mr Nazareth has published an advertisement in the newspapers to inform
members of the public that his clients are owners, in physical possession of
the flats in Diyana holiday homes and to warn prospective buyers not to buy
the flats at the planned auction. Doing so would be at their own risk, he
says.

One of the duped buyers, Mr Martin D’Mello, through his power-of-attorney,
has lodged a complaint of cheating and misappropriation of funds against the
builder with the Calangute police.

In his complaint, he states that the agreement of sale for the flat was
executed in September 1995. The payments were then made and he was given
physical possession of the flat in February 1999. Repeated requests to the
builder to execute the conveyance deed was ignored by the builder. Mr D’
Mello’s power-of-attorney was shocked to read in the newspaper dated August
14, 2004, an advertisement by the EDC that Diyana Holiday Homes were to be
auctioned at 3 p.m. on September 7. He was even more shocked to learn that
the builder had mortgaged the property to EDC in February 1995, a full seven
months prior to executing the agreement of sale.

In his complaint, Mr D’Mello states that the builder “dishonestly concealed”
the fact that the property was mortgaged and if he had been told the truth,
he would not have parted with his hard-earned money.

Mr Nazareth said, “the builder’s intent was clearly to cheat. Otherwise, he
would not have taken a mortgage before the sale of agreement and concealed
the fact of the mortgage.” He affirms that concealing the mortgage and
inducing a person to part with his money amounts to cheating in the sense of
Section 420 of the Indian Penal Code. But the Calangute police are still
studying whether this constitutes an offence of cheating and have not yet
registered the case.

But Mr Nazareth also says this is a breach of a contractual obligation which
leads to civil liability and one has to sue the offending person under the
Specific Relief Act to enforce the contract. Unfortunately, most of the
duped owners of flats in Diyana are based in Mumbai and fighting legal
battles in Goa are very cumbersome for them.

Mr Nazareth says the only solution to this imbroglio could be an intricate
legal tri-partite agreement between the EDC, the duped owners and new buyers
of the flats, through which he hopes to safeguard his clients’ interests.

One may notice that the builder has not been mentioned in this possible
solution. With laws as they are, it is feared that he may go off scot-free.
Says Mr Nazareth, “the law says ‘Buyers beware! take precautions” or else,
you may be crying in vain before police and lawyers and courts while the
builder laughs all the way to the bank with your money.

TIPS ON REMOVING DIFFERENT KIND OF STAINS
   
  For ink stains, spray the area with hairspray and blot with a clean paper 
towel. Reapply as often as necessary for removing the stain and rinse. 
   
  For removing deodorant stains from washables, sponge the area with white 
vinegar and wash in the hottest water that is safe for the fabric. 
   
  For grass stains use cold water. Alcohol may be used if the fabric is 
washable or try rubbing the stain with glycerin and let it sit for 30 minutes 
before washing.
   
  For removing a red wine stain, saturate the stain with white wine and watch 
it disappear. 
   
  For makeup stains, spray with hairspray, blot and repeat until the stain is 
removed. Wash as usual. Shaving cream makes a good spot remover for upholstery 
and carpets. 
  
For grease stains, rub in some mechanics' hand cleaner and rinse. Another way 
to clean grease strain is to wash it with petrol or kerosene. 
   
  If you have grease on clothes, put a can of coca cola in the washer. It 
takes the grease out of clothes. 
   
  To clean soiled shirt collars, use a small brush with shampoo. 
   
  To make white fabrics as white as possible, add a teaspoon of peroxide to 
hot water and soak. 
   
  For bloodstains pour peroxide on them and use cold water.
 
To remove rust from washable fabrics, put lemon juice and salt on the stain 
and place in the sun to dry. Also you can make a mixture with equal parts of 
salt and cream of tartar. Wet the spot, apply the mixture and place in the 
sun. 
  When trying to remove a stain (from a washable fabric), get it good and wet 
before applying any detergent or stain remover. Less likely to streak or 
remove colour. Pretreat stains before washing. If the stain is not removed 
after pretreating and washing, do not dry in the dryer. The dryer will set the 
stain. 
   
  To remove grease stains from fabrics, just dab some dishwashing liquid on 
the stain and toss it into the washer. The next time it comes out of the 
machine there will be no trace of the stain.

  WHISKING UP THE GRAVY   Some people make gravy in the roasting pan some use a saucepan; it really doesn't matter. What is important is to make sure you scrape up whatever has stuck to the bottom of the roaster - those caramelized bits will add lots of flavour to your gravy.  CARVING IT UP   Don't carve the turkey as soon as it comes out of the oven. You'll lose all the terrific juices. Instead, put it on the counter, away from drafts, and let it '"rest" for 20 to 30 minutes. During this time, the turkey's juices, which will have come to the surface during the roasting, will settle back into the meat, and the turkey will be easier to carve (not to mention juicier and even more delicious). Resting the bird also gives you some time and oven space to cook or heat other food. 
 THE NUMBERS GAME   These guidelines will help you decide on the size of the bird and how long to cook it. Roasting times are approximate for unstuffed birds cooked at 180 degrees centigrade/ 350 degrees Farhenite. Add half an hour extra for stuffed turkeys.  Number of guests  Size of turkey Cooking time --  8 people
   12 - 14 pounds / 6 - 7 kg 2.5-3 hours --  10 people15 - 16 pounds / 7.5 - 8 kg 3.5 hours --  12 people   18 - 20 pounds / 9 - 10 kg   4 hours --  14 people   21 - 22 pounds / 10.5 - 11 kg   4.5 hours --  16 people   24 pounds / 12 kg5 hours --  CLASSIC CHRISTMAS ROAST TURKEY (Serves 8, with leftovers) 1 Turkey (medium), about 4-5.9kg   1 lemon   2-3 fresh bay leaves   1 onion, peeled and cut into quarters   50g butter, melted   Preheat the oven to 180C/400F. Remove the giblets and thoroughly rinse the turkey under cold water, then pat dry using kitchen paper.  Season inside the turkey with a little sea salt and plenty of fresh ground black pepper. Finely grate the zest of the lemon and reserve,
 then cut the lemon into quarters lengthways. Tear the bay leaves in half and place these, with the lemon and onion quarters, inside the turkey's main cavity. This will flavour while the bird is roasting.Transfer the Turkey to a large roasting tin, breast-side up. Brush generously with the melted butter and season the skin with sea salt, freshly ground black pepper and the lemon zest. Place a square of foil loosely over the turkey to protect the breast and legs. Roast, in the preheated oven, for the calculated cooking time, basting with the juices every hour.About 30-40 minutes before the end of the cooking time, remove the foil then return the turkey to the oven. Check it is thoroughly cooked by inserting a skewer into the thickest parts of the breast and thighs: the juices should run clear and there should be no pink meat. if the juices are still pink,
 return to the oven for a further 15 minutes, then test again.Transfer the cooked turkey to a warmed serving dish, cover tightly with buttered foil and keep warm. Allow to rest in a warm place for at least 30 minutes (it will stay hot for up to an hour if tightly wrapped in foil). Resting the turkey will allow the meat to relax and become firm, making it easier to carve and more succlent. Serve with roast potatoes, vegetables and all the trimmings.Clever twist - After seasoning the bird, make a quick herb and lemon butter to go underway the turkey skin. combine 100g butter with 10g fresh thyme, chopped, 20g fresh flat-leaf parsley, chopped, and the finely grated zest of 1 lemon. Lift the skin from the neck of the turkey and use
 your fingers to make a pocket separating the skin from the breast meat. Push the butter evenly underneath the skin to coat the meat, then smooth the skin back down. Gourmet secret - Make a herb, lemon and harissa butter and use as above. [Goanet] Tandoori-Style Turkey

Tandoori-Style Turkey
   
  1/2 c plain yogurt
1/2 c lemon juice (2 lemons)
3 tsp garlic paste
1 tsp ginger paste
2 tsp chili powder
2 tsp coriander powder
2 tsp cumin powder
2 tsp salt
A few drops of orange and red food coloring to get the traditional red 
tandoori color

1 turkey - around 8-10 lbs. A smaller turkey will be more flavorful.  Mix all 
ingredients together in a bowl. Remove the neck and giblets from the body 
cavity, rinse under cold running water. Place the rinsed turkey breast-side 
down in a big bowl. Rub mixture over and inside the turkey. Keep overnight in 
the refrigerator to marinate.

Preheat the oven to 325F. Roast the turkey, uncovered, breast side down for 1 
hour, then turn and continue roasting with the breast side up until an instant-
read meat thermometer registers 165F. when inserted into the largest section 
of thigh, avoiding the bone.

Baste the turkey once every hour with one-half to three-fourths cup of chicken 
stock mixed with half a stick of melted butter, or any other basting liquid of 
your choice.


Cook an 8 to 12 lbs for 2 3/4 to 3 hrs. The cooking times are guidelines only. 
Use a food thermometer to determine safe doneness.

Note: You can add small red potatoes and baby carrots all around the turkey 
when roasting. Add a few dollops of butter and a a dash of pepper to them. 
They turn out fabulous when the turkey is done.

Prepare Neureos
Ingredients :

1/2 kg flour
2 tablespoons ghee (or hydrogenated oil)
a pinch of salt
For the filling:
1/2 kg. sugar
1/2 cup water
1 half ripe coconut grated fine
100 g. cashew nuts (chopped very fine)
100 g. raisins
2 tablespoons ghee
6 cardamoms (powdered)
oil for frying 

Preparation :

Mix flour, salt and ghee well, add just enough water to knead into a small 
dough. Keep aside.

Heat sugar and water till a syrup is formed. Add the grated coconut, ghee and 
nuts. When the mixture has thickened, add raisins and cardamom powder. 

Remove from fire after the mixture turns quite dry. Cool and keep aside. 
Divide the dough into small balls, roll out into thin rounds, put a spoonful 
of the coconut filling on each round, wet the edges, press down to form half-
moon shapes. Trim edges preferably with a cutter and deep fry in hot oil.
