[lace-chat] corned beef

2013-04-29 Thread Jean Nathan
If you try to make corned beef hash with our corned beef, you end up with a
mush. I tried it before we realised that US corned beef isn't the stuff that
comes in tins here, but is totally different. When using an American recipe
we have to look up the internet to see what some of the ingredients are
known to us as.

There are some variatons on what food is called within the UK:

A soft bread roll in the south is a barm cake inparts of the north and I
know that when we wanted ham in Sheffield many, many years ago it was
referred to as cooked ham - just ham was bacon.

Hi,

Might the US corned beef be the same as salt beef here in the UK? I
haven't cooked it myself but have eaten some cooked by a neighbour and
the taste was similar to corned beef.

Having checked a recipe for the preparation for salt beef, it is exactly the way
you would prepare corned beef from scratch in the US. You brine a brisket for
approximately 7 days and then poach until fork tender. Delicious! And totally
different from the corned beef you get in a can (although that is good too!)

[lace-chat] Corned beef

2013-04-08 Thread Jean Nathan

Found this:

In the United States and Canada, corned beef typically comes in two forms,
a cut of beef (usually brisket, but sometimes round or silverside) cured or
pickled in a seasoned brine, and canned (cooked).

In the United Kingdom, corned beef refers to the variety made from finely
minced corned beef in a small amount of gelatin (bully beef; from the French
bouilli boiled), and is sold in distinctive, oblong cans or in slices from
supermarkets.

Salt beef in the UK and Commonwealth as a cured and boiled foodstuff is
sometimes known as corned beef elsewhere.

What's a broiler?

I have a microwave oven, a gas cooker which consists of an oven, a grill (a
wire mesh over a tray on which you put the food with the heat above) and
hobs, and a few electric gadgets such as toasted sandwich maker and toaster,
but have never heard of a broiler. Boiling yes, broiling no.
