I just downloaded and installed LO4032 onto a Macbook Pro with OSX 10.9.5, the
app installed fine without problem, even the FR lang-pack.

The problems you are encountering with unpacking of the DMG could be multiple :

- corrupted download ;
- something else blocking the unpacking of the DMG file (antivirus ?)

As it currently stands, no one else has reported a problem of this nature
against 5.0.3.2, so it could be something that recently changed in your own
system.

Perhaps try checking the md5 hash against your downloaded DMG to see if they
match ?

Current Fresh release is now 5.0.4.x, clicking on the "Info" link below the
download button brings up a page with the md5 has on it.

I have FINALLY installed LO 5.0.3.
For some reason, it did not automatically open the OSX DMG Installer (as
previous LO upgrades have done with no problem).
I manually selected the DMG Installer and everything loaded as expected and
desired.

Since I have not changed anything in this computer, I do not know what the
problem was.
I DID upgrade to OSX 10.11.02, to see if that would fix this problem, but it
had no affect.
I do not have any antivirus SW on this machine, so that would not be the
problem.

Since I have downloaded this file six or seven times from the same source, I
doubt it would be corrupted every time.

Tried to find the md5 hash (not sure what that is...  Check Sum, I assume) on
the downloaded version (in my computer) but did not know were to look.
Information was no help.
Maybe that is something done in Terminal.
I seldom go there, I do not know the commands.

"Opening process" is the unpacking and installation of the Libre Office
application in the computer.
There are a number of steps involved before the new version of the application
can be used.
What would you call it?

I am familiar with the process you describe.
LO 5.0.3 does not do this on OSX10.10.5.
The previous LO version loaded correctly (as you have described).
This version (5.0.3) never completes the loading(unpacking), so I cannot drag
the LO.app to the Application folder.
Since you are using OSX 10.11.2 that is not the same version as my OS, so this
is not helpful.Try reproducing the install on OSX 10.10.5. 

UPDATE.

I have installed OSX 10.11.2 on my Computer.
Libre Office 5.0.3 STILL does not complete the installation process.
After selecting the DMG file from Finder a window opens, the bar at the bottom
shows it is installing, then the spinning beachball shows up and nothing more
happens.
Activity monitor shows that the application is "Not Responding".
I allowed this to go on for over an hour before stopping it and deleting the
.DMG file from Downloads.

On my OSX 10.11.2, I downloaded the 5032 DMG file, double-clicked on it to open
it, then dragged the LibreOffice.app icon to the Applications folder.

I was asked if I wanted to replace my existing version of LibreOffice with the
new one, I answered yes, and the overwriting process was started and completed
successfully. Then I can double-click on the LibreOffice icon in the
Applications folder and LibreOffice is started once I have authorised
Gatekeeper to allow it to launch.

Problem not reproduced on OSX 10.11.2

Updated 5.0.3 "downloads" from Libre website.
Finder shows DMG file.
But after selecting DMG file, the opening process runs for hours and never
completes.
Previous upgrades took only a couple of minutes to complete installation.
