It's not hard to do this without meaning to. At least, that's what
happened to me at one point fairly soon after I first got a my Airbook.
I went crazy for some time trying to figure out what happened to my
speech.

The three finger tap is a useful feature. But, it's also a lurking trap
for the innocent. I suppose I'm now of the opinion we should all have
three finger tap drummed into our brains right along with learning about
Command F5.

I have a full size keyboard. repeatedly pressing F12 worked. 

I found the setting for closing windows when you close an app. isn't there 
another one for not opening previously open windows on startup? I think I've 
seen it before but don'tknow where to look for it now. can you tell me where it 
is?

believe F10 is mute, F11 is volume down and F12 is volume up on most Apple 
keyboards. Generally I have to use the Fn key with these. Also, in the sounds 
system settings area is a play tone while adjusting volume setting you should 
make sure this is checked.

BTW. I am still considering your multiple window issue and will probably write
