If you like to take pictures of birds go to the Merit Island Wildlife Sanctuary. It's an overwintering spot for a lot of migratory species from all over the east coast. I don’t know the area well but did have several business trips to NE Orlando, U Cntrl Fla neighborhood. In my “what to do while I’m here” searches I came up with many fine birding opportunities. The Alligator Farm in St. Augustine. Canaveral National Sea Shore & Merritt Island National Wildlife Refuge, although they're closed to public access if NASA is launching anything. You should be able to find a launch schedule on NASA's web site. The Silver Springs attraction - where parts of the TV show "Sea Hunt" were filmed - has been absorbed into Silver Springs State Park. I don't know if they still have the glass bottom boats or not. Cypress Gardens is now part of Legoland Florida and I can't figure out if anything is left from the historic attraction.
