Essentials are a proper pan and don't f'n hesitate ! Just flick your wrist
sorta like you want to flip someone off :)

Boiled eggs, hell. I want to know how to flip an omelet without breaking
it. Seriously.

(Hardboiled; works for me: cold eggs in cold water, very low heat, walk
away for at least 30 minutes but I've left them for an hour; come back,
cool, peel with no problems.)

[RBW] OMG! Egg misguidance from Rivendell

2017-02-04 Thread Justin August
I learned how to do perfect hard cooked eggs and have never looked back.
Boil water.
Put eggs in steamer basket (not in the water) and steam with lid on for 12
minutes. You can leave out or refrigerate immediately it's up to you.

The way to get the shells to peel off best is by using eggs that are older. The
pH changes and that is the major issue in shells adhering to the egg.

Soft cooking would probably just mean changing the time to something lower like
7 minutes of steaming.

[RBW] OMG! Egg misguidance from Rivendell

2017-02-03 Thread 'Mojo' via RBW Owners Bunch
No no no! Like a high trail bike climbing at 4 mph, my egg boil method veers
wildly from Will@Riv's advice in the email that came today. Never drop a cold
egg into boiling water unless you want it to crack and bleed whites into the
water. Now my method is modified by living at 5000 feet. But I place cold eggs
in cold water then add heat. When boiling starts I time for 4 minutes for soft
boiled eggs that look similar to the egg in the email. Seven minutes firms the
yoke but not into the 'hard boiled' category. At the end of the 4-7 minutes, I
come back into Riv agreement with an ice bath.
