There are two huge obstacles you will have to overcome to make this project 
work properly: cable pull and cog clearance.

I do not believe it is possible to clear a 42t cog with the M310 derailleur (or 
any commonly available <10s rear derailleur) without a derailleur hanger 
extender.

derailleur can currently span the entire cassette, because...
The 10s+ derailleurs that are available use a different pull ratio than the 9s 
ones and they require much more cable pull to move the same distance. This puts 
those silver shifters at a huge disadvantage.
There are a number of products like the Jtek Shiftmate that are designed to 
modify the cable pull, but with friction you can simply increase the diameter 
of the shifter body to pull more cable or modify/remove the stop that prevents 
the lever from going as far as it needs to. Microshift also sells shifters in 
bar end or thumbie options that are designed to index/friction Shimano and SRAM 
mountain derailleurs.

You are likely experiencing a combination of these issues (ie the current 
derailleur doesn't clear the 42t cog or move far enough to be in position to 
clear it) and that could be resolved by removing one of the cogs, installing a 
spacer behind the biggest one of similar size, and using a derailleur extender.

combed through the (many, many) results here on 1x11 drivetrains and still 
have two questions. I am using a silver2 shifter.

1. Has anyone been able to get a Shimano Altus/M310 to shift 11 speeds to a 
rear cog with 42t? I can get it to 37t but no farther.

2. If you have successfully used silver2 shifters with an 11-speed cassette 
and ≥42t cog, what derailleur did you use? Am I best off with the Shimano 
M8000? REI currently has a sale on Shimano Alivio M3100-SGS 9, Shimano 
Deore M5120-SGS 10/11, M4120-SGS 10/11.
