I resorted to natural=cliff on the sink hole under Eyam Edge, but there the
sides were vertical. There has recently been a fair bit of discussion about
extending cliff tags, and one of the cases is for non-vertical ones!

That does make some sort of sense - the sides (especially at the top) 
are quite steep.

I know that "tagging for the renderer" is not particularly helpful,
however, might it be appropriate in this instance to map the significant
slopes around the edges of the crater with man_made=embankment ?  There are
slopes there in reality, and they are made by human activity (even if not
intentionally).

Interesting to read about this too, I don't know about it before.

Has anyone got a good suggestion for tagging the crater itself?

I removed the cemetery tag from it, because it isn't really.  The 
crater's a separate physical feature from the military exclusion zone:

Previously it had "landuse=basin"
