I had assumed that you meant you could not make any changes, but you actually meant that you could not make changes by going into "Message List Columns". You are correct you cannot make changes in here that stick and I agree that it is a bug. As a work around, try right clicking on the header columns,select manage viewmodes, and then select the mode you want to change. Make your changes and they should stick. You can also make changes, like sort order by clicking on the headers and that will stick also depending on your setting for saving changes.
