I have had many helpful comments since my post both on forum and direct
messages.  Thanks to all, I have F/H working "over the air" using no RF at
all.  My test "Fox" is a desktop computer in the den and my "Hounds" are a
couple of laptops on a kitchen counter.  Even with all the household
noises, washer, scanner, and furnace, the decodes work perfectly.  And I'm
not pumping out full audio either.  Matter of fact, it's amazing how little
audio is required, so it's quiet comfortable on the ears.

With Fox at 300 and the Hounds at 1500 and 1800, they work great.  Then
when the Fox clicks on them, they go to 310 and 370, or there about, to
finish the contact.

We already have at least 5 laptops that will be used in this F/H demo and
hopefully we can show the inner workings of the Fox and why things work the
way they do.  We will also try to make contact in "normal" FT8 mode to show
why this doesn't work.  Also calling below 1000 will be shown.  At least
they can see what the Fox sees via a large flat screen TV.

Will have users just enter their call in WSJTx and change nothing else as
it's of no matter for the demo.  That way, they will recognize their own
call on the laptop in front of them or the Fox view on the big screen.

I scotch tape the ear buds to the microphone on a pair of Apple ear buds
plugged into the PC.
Then set up a fox instance and several hound instances on the same PC.
Any number of different scenarios can then be demonstrated.

Another approach is to use AUDIO instead of RF for your demo.  No radios 
needed, just laptops.  Deliberately route the FT8 audio output to the 
loudspeaker and use the microphone for audio input.  In a typical meeting room, 
there is generally enough audio level for decoding, above the usual hubbub of 
excited hams.   [An interesting point that!  FT8 handles weak sigs and QRM very 
nicely.]

I’ve run a workshop like that.  The first part of the session involves getting 
the software installed, running and configured on all the attendees’ laptops, 
with appropriate audio & station settings and accurate clocks.  Ideally that 
should be a separate pre-session, with competent helpers on hand to deal with 
the inevitable issues …  or maybe a set of ‘loaner’ laptops pre-configured.

The second part gets everyone at least receiving and decoding FT8, and 
hopefully most of them transmitting too, making QSOs within the room.  

The third part moves into fox-n-hounds, contesting and whatever, for those who

Couple of ideas
#1 You can actually use speaker/mic to do it so no RF is involved at all.
#2 You can run one computer with two big monitors and run 4 or 5 copies of 
WSJT-X all on virtual audio cables.
You can do your own test that way to learn the Fox side a bit better.
