How about Kim Bilir's 'Feelin?'
Not particulary Latin in a melodic sense, but to my ear it has that
really dense syncopated percussion and whistles sound like those
massive drum bands from South America (Brazil perhaps?)

starts off slow, has lots of stops and shouting and progressively gets
faster and faster till it's going at an insane tempo and explodes
It's a Batacuda track - (the one I played at midnight on NYE)- You can
usually pick it up in Mr Bongos in Soho, London for £6. I'm sure someone
on
the list will be able to give you the name before I get to look at it!
