For heading styles you can press control 1 for a level 1 heading,
control-2 for a level 2 heading, etc. You can do this for heading levels
up to 5.
When you read the line of text with the new heading JAWS will verify

with JAWS 2020 with good success. I have recently used JAWS with
LibreOffice version 7 and it works quite well. Admittedly, you're going
to get the best accessibility experience with Microsoft 365 but
LibreOffice, at least
